Upstream DNS: DNS over HTTPS (DoH) or over TLS (DoT) possible?

Hi,
I am running the latest pihole on an up-to-date Raspbian.
Can anyone point me to information or a guide on how to use DoH or DoT (I don't mind which one) for the upstream DNS queries?

EDIT: I saw this doc (Redirecting...), but I am not intending to use cloudflare as DNS service for various reasons. Any chance I can customize the DNS server?

Which one would you like to use? And what are the reasons to chose this specific one?

We typically advise users to set up their own local resolver to become independent of all the big players and to ensure that no single party like Google, Cloudflare, etc. can record your browsing habits (your ISP still could, but they can always...):
