Before overriding the OS check, wanted to see if I missed something.

Buster is not supported anymore. If you want to keep using Buster, please use the environment variable PIHOLE_SKIP_OS_CHECK=true.
What is potential drawback if we skip the OS check
We simply can't be sure if Pi-hole will work on an unsupported OS, because we only run tests on the supported ones.
Buster is a known OS and Pi-hole will probably run without issues (but there is no guarantee).
The most important issue you need to consider is: Buster won't receive updates. You should probably consider upgrading your OS.

Yes, the page is outdated.
Debian 10 (and Raspberry Pi OS 10) are not supported.
