You'd miss out on the tweaks for Bullseye mentioned by yubiuser that were applied to the beta if you reverted to the release master, so I'd probably stick with the working solution then.
Just remember that you'd have to do so manually once the next Pi-hole release is due. i.e. you can't just use pihole -up (seems the release is almost good to go, we are just waiting for dnsmasq to release as well).
