Quick reference for v6 settings?

I've looked in every place that the documentation directs me to, including this one - but nowhere actually lists all the configuration items - instead suggesting that I can see them in the TOML file - but I want configure my new upgraded instance by converting my existing configuration items before I deploy it and I don't want to mess around with getting a dummy instance up in the meantime.

Expected Behaviour:

List of all environment variable settings linked from the docker page in the help, or the Docker Hub, or from the Pi-Hole Docker GitHub README.

Actual Behaviour:

Can't find them; unsure what the new equivalent settings are and which ones have changed from v5 to v6
