Details about my system: Basic Latest Version Pihole install

What I have changed since installing Pi-hole: I Just added some Blocklists

You'd need to install some DoT or DoH proxy resolver software on your system hosting Pi-hole (e.g. stubby, cloudflared,...).
Just make sure that it would not grab port 53, as that is required by Pi-hole. You should consult your chosen DoT/DoH package's documentation for details, but it should be easy to configure them for an alternative port, e.g. 53053.
For a DoH option, you may also refer to our community guide for cloudflared (DoH).

Then point Pi-hole's Upstream DNS Servers to your local DoT/DoH proxy exclusively (e.g. 127.0.0.1#53053).

can this be used with unbound? and include in the /etc/unbound/unbound.conf.d/pi-hole.conf?

I don't know, that sounds like a great question to ask your friend.
