If I untick IPv6 upstream servers under settings>DNS pihole still resolves IPv6 and AAAA records.
I believe IPv6 can be looked up over IPv4 so what's the point of having the IPv6 boxes?
This allows Pi-hole to contact those DNS servers via their IPv6 address. For example, you could use the IPv6 address only without the IPv4 address.
As you noted, if you can contact them via IPv4 there is no need for IPv6, as the domain resolution is the same regardless of how you contact the upstream DNS server.
