it is possible to hide the version.bind when someone send a chaos DNS-Query with "dig" to the pi-hole?

You would need to compile pihole-FTL yourself. Not sure if the sources are available...
As far as I can tell, the source code for pihole-FTL is NOT in this repository. The source code would be something like the content of dnsmasq-2.80test8.tar.gz.
Correct me if I'm wrong
If you don't want to edit the source, just add a rule in blacklist with "version.bind" and work!
Or close your open resolver, so you aren't getting these queries from the internet.
