You configure Pi-hole to use eth0 interface:

*** [ DIAGNOSING ]: Setup variables
    PIHOLE_INTERFACE=eth0

But your system doesn't have an interface called eth0.
You have end0 and wlan0.

Run pihole -r, select "reconfigure" and change the interface to one of the available ones.
