thats a Docker-Pihole-V6 with a new installation. I cant select anything in my Upstream Servers. Its "locked" (the lock next to the sign in the heading). I cant select anything in it. Some/all other things are selectable
This is on purpose. Everything that is set via env variables is locked. You need to change the env variable. On docker this is likely set on your compose file.

Please Note: Settings that are set via environment variables effectively become read-only, meaning that you will not be able to change them in the web interface or CLI. This is to ensure a "single source of truth" on the config. If you later unset an environment variable, then FTL will revert to the default value for that setting.
