Is it possible to select multiple DNS Servers, as seen in the photo i have cloudflare selected but i can also select others aswell like google

Yes, you can select as many as you want.
By any chance do you know how pi hole decides which one to use or is it random.
There is a selection algorithm. It is not random.
Ahh thanks so if i understood it right PiHole uses the fastest responding server now for 1000 queries or 10 minutes.
So pi hole would send the request to both and determine the fastest to respond
