If you are Experiencing issues with a Pi-hole install that has non-standard elements (e.g you are using nginx instead of lighttpd, or there is some other aspect of your install that is customised) - please use the Community Help category.
Expected Behaviour:
I recently updated my pi from Stretch to Bulleyes and I seem to be having some DNS issues. I disabled the DNS server on my Verizon Fios router G1100 and set pi-hole as the DNS server which was the original setting before upgrading to Bullseye. Pi-hole showed all the individual clients on the web interface which was normal.
Actual Behaviour:
After a day, in the middle of the night, pi-hole did not show individual clients anymore. It started to only show my Verizon Fios even when the DNS server has been disabled on it. I double checked my settings and nothing seems to be out of order.

What am I doing wrong? I did reconfigure by running pihole -r:
[i] You may now configure your devices to use the Pi-hole as their DNS server
[i] Pi-hole DNS (IPv4): 192.168.1.152
[i] If you have not done so already, the above IP should be set to static.

Where am I missing the step to correct the IP?
Install log shows this as well:
