There is a known problem in V5 with this privacy setting. When you select this, blocking is disabled. The documentation has been updated, but the privacy option won't be removed until the next release.

Set privacy level to 3, 2, 1 or 0 to resume ad-blocking.

wooo! started to get some queries! set it to "Show everything and record everything"

I opened Youtube on my phone and got an ad right away sadly though. Need to add more blocklists? Oneplus6 isnt green yet.

YouTube serves ads from the same domain as the content, so static blocklists are typically ineffective. There are some user-developed tools to block YouTube ads - this is a recent one:
