The issue I am facing:
Pi-hole doesn't update the search queries and doesn't block adds.
Details about my system:
old dell laptop running ubuntu server, I've got a cat6 cable wired to the router(I think) not the Eero.
ive included a pic showing the physical wiring.

What I have changed since installing Pi-hole:
can't connect to the internet

This would suggest that you haven't configured your router and/or individual clients to use Pi-hole for DNS.
Your debug log would support this, at it shows that your router is still distributing itself as local DNS server:

Have a read of Pi-hole's Post-Install suggestions to make your network take advantage of Pi-hole .
