Is there any info on how robust Pi hole can be? Could it handle the load of an environment with 250 devices?

I believe Pi-hole CAN handle it.
The question is if the hardware you have it installed it on, does.
A Raspberry pi, won't handle it (as fast as a more robust computer would) for sure

The largest network I know of using Pi-hole is an environment with 2,500 users using two servers with the following specs:
- 4 CPU, 2 Core
- 8 GB RAM
The load on these servers are still quite low.
