When I look at query data on the dashboard, there is zero across the board. I keep receiving diagnosis notifications which are "query from unknown sources".

Also in the debug log I see my vps server's interface resolving addresses.

I've been trying to remove my server's public IP address but I don't see in any config files how to do so.

Your debug log shows that your Pi-hole host machine is receiving DNS traffic from public IP addresses, e.g.:

This indicates that your router's and/or your Pi-hole machine's firewalls are allowing public DNS/port53 access.
You are just on step away of running an open resolver, posing a potential threat for all Internet users, e.g. by serving as a multiplier in a DNS Amplification attack .

Note that the Pi-hole team strongly discourages Pi-hole’s usage as an open resolver, and we won't provide support in that case.
