Hi together,
I am using Pihole for quite some time now.
Since a few days I am running into the following issues:
Behaviour:
While visiting random pages I am seeing Ads which I haven't seen for ages.
For example www.apkmirror.com.
I am really sure I did not change any network infrastructure.
My Pihole is running on a RasPi4b powered by DietPi 7.3.0.

Use these tools to determine why you are seeing ads on that site. I will note that with a stock Pi-hole install I do not see ads on that site.
Block ads or fix broken sites
This FAQ is written in the context of finding out how to block an ad that isn't blocked automatically, but the same steps can be used to troubleshoot issues with sites that don't function properly. An example is that sometimes certain payment gateways try to collect metrics on the sale, but these domains are blocked by Pi-hole, so the payment cannot be processed. Also, some links send you through several referrers and if one of them is blocked, you may land on a …
These Ads came back all out of sudden.
And it seems I only see the on my Cellphone.
(I am not seeing them on my PC with Default Edge Browser.)
Btw: I cannot open https://pi.hole/admin anymore, too.
This might be related?!
// Edit: thats all while visiting the site mentioned.

Is it an Android phone?
Try install the "Network Info" app and see what DNS server(s) is/are configured for WiFi.
I guess for iOS you have something similar to check configured DNS servers.
The Android DNS points to the RasPi with Pihole.
Have you tried a different browser?
Check in the browser settings if DoH is activated that circumvents Pi-hole DNS.
Solution:
Secure DNS in my mobile Chrome browser was active.
I disabled it and it is fine again.
Thanks for your suggestions bringing me to this setting...

The correct URL would be: http://pi.hole/admin .
It is an http page, not an https page.
